The Final Mastery: 3-Day Tokyo Immersion
You have mastered the basics online AND understand the chemistry of Wagashi. BUT a gap remains between knowing the method and commanding the soul of the craft. THEREFORE, join our 3-day intensive in Tokyo to bridge that gap, calibrate your senses, and gain true technical independence.
Our Mission
From Uncertainty to Artistic Authority
You have embraced the traditional methods and understand how water, sugar, and azuki beans can transform into a masterpiece AND you are committed to delivering this authentic experience to your customers. BUT the simplicity of the ingredients is unforgiving; whether it is the frustration of azuki beans remaining hard after five hours of boiling, the anxiety of hitting the “perfect point” during reduction, or the struggle to eliminate unevenness on the crust, these are hurdles that video cannot help you clear with confidence. Without professional validation, you are left guessing if your work truly meets the “gold standard” of a master.
THEREFORE, our Tokyo Intensive provides the rigorous, real-time feedback you need to turn doubt into mastery. By having a master evaluate every step of your process—from the exact softness of the bean to the flawless finish of the crust—you will internalize the sensory “An-bai” that defines a professional. We empower you to stop following a recipe and start commanding the craft, giving you the ability to solve any technical challenge by yourself
Learning Experience
I. Technical Validation: Closing the Accuracy Gap
You will demonstrate your entire process from scratch, from azuki paste cooking to dough preparation. Our masters will evaluate your current proficiency to identify exactly where your technique meets the gold standard and where it requires correction. By receiving direct, expert feedback on your finished dorayaki, you will replace guesswork with professional precision.
II. Sensory Integration: Achieving Flawless Consistency
Through the rigorous experience of cooking 1kg of azuki and baking a minimum of 60 crusts, you will internalize the rhythm of production. You will master the “An-bai”—the crucial sensory art of detecting changes in aroma and adjusting moisture content that video lessons cannot convey. This ensures you can produce consistent, high-quality results regardless of your kitchen’s environment.
III. Commercial Authority: From Kitchen to Market
Mastery extends beyond the stove; you will explore the scientific characteristics of ingredients and a wide variety of dough-and-filling combinations to create your signature product. We provide critical insights into professional hygiene standards and packaging materials essential for retail success. To ensure your long-term success, we also offer professional mediation for sourcing authentic Japanese confectionery tools and ingredients.

A Master of Tradition, Hospitality, and Resilience
Yoko Senoo | Founder of Wagashi Labo “Ichiyo”
From Paris to Tokyo: Connecting Smiles through Wagashi Yoko’s journey took a global turn after hosting a Kachou-an tea ceremony in Paris, where she witnessed firsthand how the beauty of Wagashi transcends cultural boundaries. This experience solidified her mission: to empower international chefs and entrepreneurs to shine through the art of Japanese confectionery.
Her Teaching Philosophy: The 3-Day “Concentrated Decade” Yoko understands the high stakes of the food business—where “tasty” is just the starting point and “referral-worthy” is the goal. During your 6-hour daily sessions, she shares the hard-earned secrets of texture, presentation, and mass-production efficiency that she developed through her years in the competitive world of Tokyo’s Kappo dining. She is here to help you skip the years of wasted ingredients and move straight to artistic authority.
